great recipe. i love beef tenderloin but cant eat it all the time, its a bit expensive. this is a good dish that is similar and tender but much cheaper. thanks jason

I was going to suggest lamb with this. You can sear a nice rack of lamb just like I do with the pork loin. Put the onions under the rack before you put it in the oven as well. You can even use a different dried fruit if you like. Dried apricots would work REALLY good for the warm compote.

My most favorite one is veal…
