Tip: Pinot Gris from Alsace, France can be pricey but is worth the money for complexity, quality and has excellent flavors for sushi.
Tip: Chenin Blanc typically has a rich texture with bright acid, floral and nutty notes. Look for French examples from Savennieres and Vouvray, which are the best and pair perfectly with seafood.
Technique: Try decanting a Savennieres, allowing the wine to show more fruit and flavor, since they are usually age worthy and therefore tight in their youth.

Tip: Biodynamic wines are grown organically, but with a stricter method that considers the long-term effect on the balance of the soil. This means better quality of the fruit and therefore better flavor! These are the ultimate “”green”" wines.
Trick: BYOB! Bring Your Own Bottle to dinner more often. It allows you to choose your own wine from a broader selection and save money. Normal corkage fees range from nothing to $25. Most sushi restaurants are better known for their beer and sake selections, and lack a decent or appropriate wine selection.”
